Bien entendu, ce fut une exp\u00e9rience culinaire m\u00e9morable. Cependant, ce que j&#8217;ai le mieux appr\u00e9ci\u00e9, ce sont mes \u00e9changes avec deux artisans de tr\u00e8s haut niveau.<\/div>\n<div><a href=\"https:\/\/www.lamaisonduchocolat.com\/fr_fr\/nicolas-cloiseau-meilleur-ouvrier-de-france-mof-chocolatier\" target=\"_blank\" rel=\"noopener\"><strong>Nicolas Cloiseau<\/strong><\/a> est le directeur de cr\u00e9ation \u00e0 la Maison du Chocolat et meilleur ouvrier de France chocolatier. Cet hommes simple et passionn\u00e9 a partag\u00e9 avec moi son approche du choix des f\u00e8ves de cacao selon la tonalit\u00e9 qu&#8217;il veut donner \u00e0 chaque chocolat (bois\u00e9, fruit\u00e9, etc.).<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-7963 alignleft\" src=\"https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2023\/10\/Chocolat-soiree-300x241.png\" alt=\"Show of La Maison du Chocolat\" width=\"300\" height=\"241\" \/><\/div>\n<div>\n<p>Les d\u00e9gustations \u00abverticales\u00bb de chocolats avec un pourcentage croissant de cacao lui permettent de reconna\u00eetre le moment optimal pr\u00e9cis pour chaque effet recherch\u00e9. Et selon lui, \u00e7a se situe presque toujours entre 60 et 72%. Il pense donc que le tendance vers un pourcentage toujours plus \u00e9lev\u00e9 de cacao est une mode. Je ne partage pas n\u00e9cessairement ce constat, mais l&#8217;exp\u00e9rience est bien s\u00fbr de son c\u00f4t\u00e9. Notre premi\u00e8re le\u00e7on est donc de suivre les experts dans leur approche exp\u00e9rimentale, c&#8217;est-\u00e0-dire d&#8217;exp\u00e9rience contr\u00f4l\u00e9e.<\/p>\n<p>Tout aussi int\u00e9ressant \u00e9taient les crit\u00e8res qui d\u00e9terminent selon lui la typicit\u00e9 d&#8217;un cacao : terroir, altitude et vari\u00e9t\u00e9. Finalement, l&#8217;origine du cacao (P\u00e9rou, Equateur, Madagascar, Ha\u00efti), qui pr\u00e9occupe tant le consommateur lambda, et le pourcentage de cacao dans un chocolat ont moins d&#8217;importance que ce peut r\u00e9v\u00e9ler l&#8217;analyse organoleptique, qui tente d&#8217;objectiver, par des mots, une exp\u00e9rience subjective. Notre deuxi\u00e8me le\u00e7on est donc d&#8217;oublier les crit\u00e8res courants de la qualit\u00e9 d&#8217;un produit pour en construire d&#8217;autres qui soient bas\u00e9s sur la science et l&#8217;exp\u00e9rience.<\/p>\n<\/div>\n<p><a href=\"https:\/\/www.capucineh.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Capucine H<\/strong><\/a> est une jeune joaill\u00e8re engag\u00e9e, dont les cr\u00e9ations inspirent cette ann\u00e9e la Maison du Chocolat pour son conditionnement et notamment ses boites de chocolat (qui sont recyclables et sans plastique). Il y a trois aspects \u00e0 retenir dans son approche de la cr\u00e9ation en joaillerie :<img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-7966\" src=\"https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2023\/10\/Creation-300x259.png\" alt=\"\" width=\"300\" height=\"259\" \/><\/p>\n<div>\n<ul class=\"has-list-bullet\">\n<li data-line=\"2\">Un sourcing \u00e9thique, par le choix de m\u00e9taux et pierres pr\u00e9cieuses recycl\u00e9s ou tra\u00e7ables. C&#8217;est notre 3e le\u00e7on.<\/li>\n<li data-line=\"2\">Une approche personnalis\u00e9e de chaque client, en fonction de sa demande particuli\u00e8re. L&#8217;objectif de la cr\u00e9atrice est toujours de raconter une histoire singuli\u00e8re, sans s&#8217;accrocher \u00e0 un vague concept (amour, beaut\u00e9, etc.). Son approche est donc psychologique, et je dirais herm\u00e9neutique autant qu&#8217;artistique, ce qui rend chacune de ses cr\u00e9ations unique. 4e le\u00e7on.<\/li>\n<li data-line=\"2\">L&#8217;inspiration personnelle de Capucine est guid\u00e9e par l&#8217;amour du vivant et de ce qu&#8217;on appelle la nature, notamment des oc\u00e9ans et de l&#8217;eau, menac\u00e9s partout sur notre plan\u00e8te. Cette inspiration, qui refl\u00e8te un des aspects les plus positifs de sa g\u00e9n\u00e9ration, \u00e9tait illustr\u00e9e \u00e0 cette soir\u00e9e par plusieurs cr\u00e9ations, dont l&#8217;une \u00e9voque superbement le phytoplancton (lien ci-dessous). D&#8217;autres bijoux reproduisent les formes uniques et pourtant reconnaissables des flocons de neige. 5e le\u00e7on : la beaut\u00e9 \u00e9merge souvent de l&#8217;inspiration par la nature.<\/li>\n<\/ul>\n<\/div>\n<div>Ces deux artisans sont ind\u00e9pendants. Nicolas Cloiseau ne travaille pas qu&#8217;avec La Maison du Chocolat, mais aussi avec SCOP Ethiquable, par exemple.
