Ce jury devait s\u00e9lectionner les th\u00e9 \u00e0 r\u00e9compenser pour le Salon International du Th\u00e9 et de la Culture d&#8217;Emeishan, dans le Sichuan, d\u00e9but juillet.<\/p>\n<p><!--more--><\/p>\n<p>Emeishan est l&#8217;une des trois r\u00e9gions de production de th\u00e9 de qualit\u00e9 dans la province du Sichuan, au Sud-Ouest de la Chine. C&#8217;est un massif montagneux sacr\u00e9\u00a0 dans la religion bouddhiste, culminant \u00e0 3 099 m\u00e8tres, et souvent couvert d&#8217;une brume myst\u00e9rieuse. Le climat chaud, subtropical et mod\u00e9r\u00e9ment humide est id\u00e9al pour l&#8217;expression des meilleurs ar\u00f4mes du th\u00e9ier, poussant \u00e0 des altitudes de\u00a0 1 000 \u00e0 2 200 m\u00e8tres. Le Sichuan est une des quelques provinces m\u00e9ridionales chinoises dans lesquelles le th\u00e9 a \u00e9t\u00e9 originellement cultiv\u00e9, probablement comme plante m\u00e9dicinale, il y a plus de 3 000 ans.<\/p>\n<p>Faire partie du jury dans un des principaux concours de th\u00e9 en Chine \u00e9tait un v\u00e9ritable honneur et une exp\u00e9rience passionnante \u00e0 plusieurs niveaux : culturel, social et sensorielle, notamment. Parmi les membres de ce concours figuraient trois c\u00e9l\u00e8bres experts chinois du th\u00e9, M YU Ganting, notre doyen et expert respect\u00e9 au niveau national, M LU Chenyin, M FENG Huasiong, pr\u00e9sident du Comit\u00e9 du Th\u00e9, et six \u00e9trangers : Marco Bertona, un expert italien, form\u00e9 et dipl\u00f4m\u00e9 comme expert de troisi\u00e8me niveau en Chine,\u00a0 M. Sheshkanta Gautam, directeur du Bureau N\u00e9palais du Th\u00e9 et du Caf\u00e9 (le N\u00e9pal produit d&#8217;excellents th\u00e9), John Gore, directeur de l&#8217;Institut de Recherche sur le Th\u00e9 du Kenya, Sharyn Johnston, fondatrice des Ma\u00eetres Australiens du Th\u00e9 et Alexis Kaae, fondatrice de l&#8217;Association Danoise du Th\u00e9, deux femmes qui dirigent avec succ\u00e8s leur entreprise de distribution de th\u00e9 dans leur pays natal ou adoptif, important du th\u00e9 de qualit\u00e9 d&#8217;une diversit\u00e9 de pays asiatiques. Selon Sharyn, on trouve en Chine les meilleurs th\u00e9 au monde, m\u00eame si ceux-ci trouvent difficilement leur chemin vers d&#8217;autres pays, en dehors d&#8217;autres pays d&#8217;Asie de l&#8217;Est.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5719\" src=\"http:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_13.jpg\" alt=\"\" width=\"400\" height=\"300\" srcset=\"https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_13.jpg 960w, https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_13-300x225.jpg 300w, https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_13-768x576.jpg 768w, https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_13-510x382.jpg 510w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>Quatre crit\u00e8res de base s&#8217;appliquent \u00e0 l&#8217;\u00e9valuation du th\u00e9 en Chine:<\/p>\n<ol>\n<li style=\"list-style-type: none;\">\n<ol>\n<li>L&#8217;apparence des feuilles s\u00e8ches,<\/li>\n<li>L&#8217;apparence de l&#8217;infusion (robe, limpidit\u00e9, etc.),<\/li>\n<li>L&#8217;odeur et l&#8217;apparence des feuilles infus\u00e9es,<\/li>\n<li>Le go\u00fbt de l&#8217;infusion elle-m\u00eame.<\/li>\n<\/ol>\n<\/li>\n<\/ol>\n<p>Suivant les normes d&#8217;\u00e9valuation du th\u00e9 en Chine, tous les th\u00e9s sont infus\u00e9s avec de l&#8217;eau bouillante, pendant 4 \u00e0 5 minutes selon le type de th\u00e9 \u00e9valu\u00e9. Les feuilles s\u00e8ches fournissent des informations sur la qualit\u00e9 de la cueillette et de la s\u00e9lection du th\u00e9, l&#8217;infusion doit \u00eatre \u00abvive\u00bb et en ad\u00e9quation avec le type de th\u00e9 infus\u00e9, les feuilles humides fournissent des informations pr\u00e9cieuses sur les ar\u00f4mes exprim\u00e9s par les feuilles de th\u00e9, ainsi que de possibles indices d&#8217;une sur-oxydation des extr\u00e9mit\u00e9s. L&#8217;analyse gustative se fait une fois l&#8217;infusion refroidie. Elle fournit des indications sur l&#8217;astringence et l&#8217;acidit\u00e9, notamment. Comme pour le vin, seule une petite quantit\u00e9 de liquide est mise en bouche, et apr\u00e8s quelques tasses, le nouveau membre du jury comprend pourquoi m\u00eame cette petite quantit\u00e9 est crach\u00e9e dans les corbeilles pos\u00e9es \u00e0 intervalles r\u00e9guliers le long des tables de d\u00e9gustation.<\/p>\n<p>Un expert chinois de premier plan donne la premi\u00e8re \u00e9valuation suivant chaque crit\u00e8re pour chaque th\u00e9, les autres membres du jury indiquent sur la feuille commune un diff\u00e9rentiel \u00e0 cette note. Notre expert-guide \u00e9tait M. LU. Globalement, et les notes allaient de 80 \u00e0 96, avec des diff\u00e9rentiels de -2 \u00e0 +2.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5720\" src=\"http:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_20_teas-300x232.png\" alt=\"\" width=\"388\" height=\"300\" srcset=\"https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_20_teas-300x232.png 300w, https:\/\/www.pierrejohnson.eu\/wp-content\/uploads\/2017\/08\/Emeishan_jury_20_teas.png 582w\" sizes=\"(max-width: 388px) 100vw, 388px\" \/><\/p>\n<p>Pour ce concours, nous avons test\u00e9 plus de 180 th\u00e9 diff\u00e9rents pendant un total de 6 heures, avec une majorit\u00e9 de th\u00e9s verts, plusieurs th\u00e9 rouges (appel\u00e9s th\u00e9s noirs en Occident) des th\u00e9s wulong (oolong), ainsi que quelques th\u00e9s post-ferment\u00e9s et une poign\u00e9es d&#8217;infusions florales et plantes m\u00e9dicinales. Nous fournirons dans un prochain article des informations sur les cat\u00e9gories de th\u00e9 utilis\u00e9es en Asie pour les lecteurs qui ne les connaissent pas. Les th\u00e9s verts \u00e9taient de diff\u00e9rentes formes et couleurs, parmi lesquelles j&#8217;ai pu reconna\u00eetre des th\u00e9s de Longjin et d&#8217;<a href=\"http:\/\/www.pierrejohnson.eu\/anji-white-tea-bio-presentation\/\">Anji<\/a>. Certaines feuilles \u00e9taient boucl\u00e9es, d&#8217;autres droites, leur couleur allaient du vert tr\u00e8s clair, comme les bourgeons et premi\u00e8res feuilles du th\u00e9 d&#8217;Anji, qui sont presque blanches quand elles sont humides, au vert fonc\u00e9. Les th\u00e9s rouges \u00e9taient aussi de plusieurs types diff\u00e9rents, souvent partiellement jaunes, un signe d&#8217;oxydation r\u00e9ussie. Les th\u00e9s PuEr post-ferment\u00e9s \u00e9taient pr\u00e9sent\u00e9s suivant la forme compress\u00e9e qu&#8217;ils ont en galettes ou tablettes, et trois d&#8217;entre eux dans un petit agrume, sans doute du yuzu.<\/p>\n<p>La plupart des th\u00e9s go\u00fbt\u00e9s \u00e9taient d&#8217;une qualit\u00e9 sup\u00e9rieure, qu&#8217;il serait tr\u00e8s difficile de trouver \u00e0 la vente \u00e0 l&#8217;\u00e9tranger. Quelques uns, probablement moins de 5%, avaient un go\u00fbt d\u00e9plaisant, et 2 ou 3 des wulong avaient un l\u00e9ger arri\u00e8re-go\u00fbt de charbon, ce qui \u00e9tait sans doute l&#8217;indice d&#8217;une l\u00e9g\u00e8re imperfection du processus de transformation. Mais la qualit\u00e9 des th\u00e9s s\u00e9lectionn\u00e9s \u00e9taient globalement excellente.<\/p>\n<p>Participer \u00e0 un jury de th\u00e9s chinois est une exp\u00e9rience incroyable et passionnante pour le v\u00e9ritable amateur de th\u00e9. La Chine est le lieu d&#8217;origine et la vraie patrie du th\u00e9. Huit m\u00e9dailles d&#8217;or et 75 m\u00e9dailles d&#8217;argent ont \u00e9t\u00e9 distribu\u00e9es. Pendant cet important salon, qui contribuait \u00e0 la strat\u00e9gie des \u00abNouvelles Routes de la Soie\u00bb\u00a0 (\u00abOne Belt One Road\u00bb) du gouvernement chinois, j&#8217;ai \u00e9galement donn\u00e9 une pr\u00e9sentation sur \u00abLe th\u00e9 chinois, les normes et les march\u00e9s Europ\u00e9ens pour le d\u00e9veloppement durable\u00bb.
