Avec un ethos \u00e9picurien et parfois quasi-rabelaisien, l\u2019objectif de Slow Food et de son fondateur, Carlo Petrini, est en r\u00e9alit\u00e9 multiple\u00a0: pr\u00e9server les vari\u00e9t\u00e9s locales qui participent de la biodiversit\u00e9, contribuer \u00e0 la souverainet\u00e9 alimentaire, lutter contre la mal-bouffe et l\u2019emprise de l\u2019industrie agro-alimentaire, etc.<\/p>\n<p><!--more--><\/p>\n<p>Participant pour la premi\u00e8re fois \u00e0 <a title=\"SGTM\" href=\"http:\/\/salonedelgustoterramadre.slowfood.com\/\" target=\"_blank\" rel=\"noopener\">cet \u00e9v\u00e9nement<\/a>, nous avons pu constater l\u2019ampleur de sa r\u00e9ussite, en une petite dizaine d\u2019ann\u00e9es. Sur la plan gustatif d\u2019abord, voici un inventaire subjectif d\u2019un \u00e9chantillon de sp\u00e9cialit\u00e9s go\u00fbt\u00e9es\u00a0: miels d\u2019Ethiopie, des falaises des Nilgiri Hills (Inde), des abeilles m\u00e9lipones des Sater\u00e9 Maw\u00e9 (Br\u00e9sil), th\u00e9s du Yunnan et du Japon, confitures de fruits sauvages d\u2019Europe de l\u2019Est et d\u2019Asie centrale, amandes sauvages du Kirghistan, sans compter les innombrables sp\u00e9cialit\u00e9s venues d\u2019Italie.<\/p>\n<p><strong>Sur le plan th\u00e9matique<\/strong>, les conf\u00e9rences abordaient tous les sujets imaginables\u00a0: depuis la souverainet\u00e9 alimentaire, jusqu\u2019\u00e0 un syst\u00e8me d\u2019\u00e9tiquetage innovant (le <em>narrative label<\/em>) mis au point par le pr\u00e9sident de la Fondation Slow Food pour la Biodiversit\u00e9.<\/p>\n<p><strong>Sur le plan culturel<\/strong> enfin, avec tous les modes de vie et savoirs illustr\u00e9s\u00a0: oasis de Libye (dattiers), vari\u00e9t\u00e9s pr\u00e9serv\u00e9es d\u2019un village de Tunisie, plantes d\u2019Amazonie et des Andes, culture d\u00e9licate de la vanille dans sa for\u00eat d\u2019origine au Mexique, raffinements de la cuisine cor\u00e9enne.<\/p>\n<p>En r\u00e9sum\u00e9, la biodiversit\u00e9 est loin d\u2019\u00eatre un sujet aust\u00e8re !<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"border-radius: 2px; text-indent: 20px; width: auto; padding: 0px 4px 0px 0px; text-align: center; font: bold 11px\/20px 'Helvetica Neue',Helvetica,sans-serif; color: #ffffff; background: #bd081c  no-repeat scroll 3px 50% \/ 14px 14px; position: absolute; opacity: 1; z-index: 8675309; display: none; cursor: pointer;\">Enregistrer<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Avec le Salon du Go\u00fbt et Terra Madre, deux \u00e9v\u00e9nements annuels\u00a0 du mouvement Slow Food organis\u00e9s cette ann\u00e9e conjointement \u00e0 Turin, la biodiversit\u00e9 participait d\u2019un registre bien particulier.
